The Low Carb Diet

There are lots of great low carb diets out there.

The first one I ever tried was the one with Tim Ferriss and his slow carb diet.

Here’s how it went down:

Well a little background a first. I was working in Korea at a manufacturing facility (as an accountant). This place happened to have the wonderful benefit of serving us 3 meals a day (7am, 11:30am, and 5pm). The only down side was it was a ton of rice. I think it started when I was researching a little about why I always got super sleepy around 2pm. I read something about lowering your carbohydrate intake for lunch to combat 2pm sleepy. Tried it for a couple weeks. Totally worked.

So next I was trying to prep for a wedding (not my own) and wanted to get a slim. I found the Tim Ferriss slow carb diet and decided to give it a try. But I knew from past experience that I am not good at strict diets so I decided to just do one simple rule: Don’t eat any rice, noodles, or bread at work.

Once I got started I set a simple timeline of 2 weeks. I blew through that no problem. The weekends were a little tough because I didn’t have my meals quite as prepared but I did mostly eggs and canned tuna which I love.

The 2 week low carb diet result? Lost 6 pounds.

Woah.

Way surprised. This was totally motivating. So I went in a little deeper and tried a more long term approach of generally limiting carbs for a few weeks then doing normal eating for a few weeks. I did this for about 6 months and finally lost over 18 pounds. I kept that off for nearly 5 years (its about time to do another one of these diets)

Here’s a few low carb yum meals I made during the diet. They are simple and easy low carb meals:

Tuna omlet:

I do 3 eggs and 3 more egg whites. fry them up and throw in a can of tuna. scramble them a bit and toss in a bit of sharp cheddar cheese. I could eat this all day. If I have it I’ll try a little salsa mixed in as well.

Tofu and Bacon:

This might be strange but I take some fresh tofu (korean styles) and fry it in a bit of coconut oil. Then crisp up some nice bacon and make little tofu bacon sandwiches.

Ground Beef and Bell Peppers:

This is the best low carb yum I’ve had. Pick some good ground beef like for a hamburger (I go with lots of fat but your choice). Then grill that up with some garlic, onions, bell pepper, and a little chili powder.

Veggie Fry Up:

This is a super simple and easy low carb meal. Take all the vegetables you have in the cupboard and chop em up. I like to go with broccoli, bell peppers, onions, carrots, and cucumber.  Fry them up good. Then fry an egg separately and throw it on top. Dash with a bit of turmeric powder and yum yum yum.
